Winemakers Notes
TASTING
Aroma:: scent of prunes and cherries with hints of undergrowth and dried mushrooms. In the best years, the softness, enveloping the palate in a velvety, full, warm and vigorous with very pleasant round tannins.
Taste: ripe red fruits embellished with cinnamon and vanilla. The older it gets, the more it leaves room for perceptions of leather, tobacco tanned and roasted coffee. The fruity aromas are reminiscent of black cherry, currants, cherries and berries. Can achieve aging of over 20 years.
FOOD PAIRINGS
It is an excellent companion to first courses based on game, such as pheasant, walnuts and truffles, duck. Roasted and grilled meat chocolate is also a perfect match with Amarone which recalls hints of cocoa.
