Winemakers Notes
Vinification: Alcoholic fermentation in concrete tanks with a blunt cone-shape to preserve the aromas. Pump-overs and punch-downs are important for extracting color from the skins
Aging: 12-18 months separately in 16 hI oak barrels for a variable period between 12 and 18 months, followed by 2 years of bottle aging
Tasting notes: Ruby red color; on the nose intense, complex, dominated by hints of ripe red fruit and jam, small notes of chocolate and hot spices. On the palate, it is warm, soft, round and savory. Full-bodied, robust, with a mineral vein, typical of volcanic soils of the Roman countryside
Pairings: Braised, game, lamb chops, matured cheeses
Serving temperature: 16˚C/60˚F
