This Timorasso from Derthona is hand harvested and fermented in stainless steel tanks with Bâtonnage to maintain lees contact. Indiginous yeast fermentation start followed by innoculation and sequential malolactic fermentation. Deserving of "Derthona" status which requiers a minimum of 1 year of bottle aging.
