Mauzac, a grape variety that's virtually unheard of in the U.S., comes from the Gaillac region of southwest France. This rendition is sparkling and dry with floral aromas, raw honey and white pepper. This is loaded with character, thanks to the fact that it's unfiltered and made with indigenous yeasts. Store this bottle upright and drink with just a light chill. A pétillant naturel wine meaning that the fermentation finished in bottle.
