Grape variety: Tempranillo 100%
Vineyards: Vineyards of the "El Grajo Viejo" Estate with more than 70 years.
Characteristics: Made only in excellent vintages. Manual harvesting in 20 kg boxes. Double sorting table. Maceration with skins and fermentation in 500-litre French barrels for 26 days at 28ºC. Malolactic fermentation in 225-litre French barrels.
Aging: 18 months in new French oak and 12 months in bottle.
Colour: Dark cherry red with a maroon rim, clean and intense.
Nose: Powerful, ripe black fruit, violets, toasted, toffee, dark chocolate, vanilla.
Mouth: Powerful, intense flavor, red and black berries, wood, vanilla, black pepper, with good acidity, good structure and very long finish.
Serving temperature: 16-18ºC.
Marriage: Roasted meats, carpaccio, pork or lamb chops, meat or fish stews, legumes, cured cheeses and raw milk are excellent vintages.
