This is also overtly floral in character with its aromas of violet, rose petal, lavender, black raspberry and anise whiffs. There is excellent intensity to the lacy medium weight flavors that flash plenty of soil tones on the refined, focused and sneaky long finale where a hint of bitter pit fruit slowly emerges. Inky dark, with abundant aromas of black plum and cherry, plus an edge of menthol, pepper and spice. The texture is dense, velvety and very concentrated, with lots of extract that draws the wine to a lingering finish. This comes from a large parcel of 1.79ha at the base of the village under Fremiets, where Rossignol is the largest proprietor. In 2020 he picked at 14.5% potential alcohol and fermented 70% of the fruit as whole clusters without a cold soak, punching down only four or five times during the entire fermentation. (CC) (9/2021)
