This Chablis from Domaine du Colombier is the ultimate example of a Chablis. Fermentation takes place in stainless steel tanks, which keeps the wine fresh - a pure and true reflection of the terroir. Delicate aromas of white peach, lemon and elderflower with spicy citrus and minerality on the palate, give this wine a round and complex finish. Fantastic with a Fruit du Mer.
Domaine du Colombier is located directly behind the grand crus of Chablis in the small village of Fontenay-Près-Chablis. Domaine du Colombier has remained in the family for many generations, dating back to 1887. The rich history of winemaking can be seen in the bottle today. The 55 hectares of Domaine du Colombier are planted exclusively with Chardonnay vines and are an extension of the 4 appellations of origin authorized in Chablis. Today, Guy Mothe's three sons, Jean-Louis, Thierry and Vincent, head the operation, using traditional winemaking techniques, with the help of modern technology. A classic example of Chablis.
