Harvest
Manual and by sorting, seeking concentration through noble rot and/or raisining.
Winemaking
Very slow pressing and light settling.
Fermentation and aging in 400L barrels for 18 to 24 months. Aging potential 20 years and over.
Tasting
Deep golden colour. Intense and complex nose. Candied notes of fruit paste, dried apricot, roasted pineapple. The mouth is of the same amplitude, voluminous and rich.
Commentary on Quarts de Chaume
The open horizon and the proximity of the Layon allow optimal installation of botrytis.
Food & wine pairings
Breton cookie, Cardamom spiced light cream, Candied orange marmalade.
