Initially revealing roasted and cocoa notes, the nose of Dom Pérignon Vintage 2015 gradually opens up to a floral bouquet of lime blossom, jasmine and peony, revealing a sublime spicy dimension. A vegetal and fruity freshness then manifests itself, with aromas of chlorophyll, orange peel and green papaya.

Palate
In the mouth, the champagne first unfolds delicately, then generously. The flesh of fresh peach and nectarine envelops notes of citrus and gentian, before extending on a remarkable length.

To fully appreciate Dom Pérignon Vintage 2015, it is recommended to serve it at a temperature between 8 and 10°C.

The estate

Named after the famous monk Pierre Pérignon, procurator of the Abbey of Hautvillers in 1668, the champagne Dom Pérignon symbolizes a rich heritage and a relentless quest for excellence. This visionary monk is often associated with the discovery of the Champagne method, a crucial milestone in the history of champagne. Dom Pérignon's commitment to quality and innovation continues, embodied by its current Cellar Master, Vincent Chaperon, who took over the torch in 2019. The house's philosophy, focused on the expression of vintages, reflects an ambition to create the "best wine in the world", a goal perpetuated since the appointment of Dom Pierre Pérignon as cellarer of the Abbey of Hautvillers.

Dom Pérignon pays tribute to the art of blending its champagnes with a special edition of the Vintage 2015. A unique collection of bottles and boxes made with the rights holders of Jean-Michel Basquiat.

The vintage

After a mild winter, the year 2015 was marked by many contrasts: a freezing spring was followed by a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and periods of drought. The saving rains of late August allowed for optimal maturation, revealing berries of remarkable generosity and balance.

Vinification and aging

The vinification process at Dom Pérignon strictly respects the principles of the Champagne method, with an absolute commitment to the faithful representation of the vintage. The prolonged maturation in the cellar, a resting time that far exceeds the standards of the appellation, allows the champagne to develop its complexity and aromatic depth.

Blend

This exceptional champagne is the result of a secret blend of Chardonnay and Pinot Noir.
