Colterenzio's Pinot Nero is part of that line of "classic" wines that this cooperative winery vinifies from traditional varieties in purity. The vineyards are made up of old plants, partly pergola, partly espalier, on slopes facing west at 400 - 500 metres above sea level, and the roots that sink into clayey soils and morainic deposits of porphyritic gravel. The vinification is carried out in the traditional way on the skins in steel at 25°, with delicate mixing of the cap for the extraction of the colour (by cap we mean that solid layer of skins, pips and other dry parts that stops at the top, at cap precisely, of the tank, driven by the carbon dioxide produced during fermentation). Malolactic fermentation and subsequent refinement take place in concrete tanks and large wooden barrels for at least 6 months.
PINOT NERO COLTERENZIO: TASTING
The Pinot Nero di Colterenzio shows a crystalline ruby red colour in the glass; on the nose, it is rich in red berries, fresh and in alcohol, with light menthol notes. In the mouth, it is fine and elegant, with a tasty extension. Very good with aromatic herbs brick-baked chicken.
