PLANT
A juicy, lighter tannin structured cuvée. 50% destemed cinsaullt + 50% wholecluster aramon. 7 day maceration, then pressed. fermentation and aging in concrete. Cinsault is picked first, after a few days the fermentation is going strong and the concrete tank is saturated in C02; they then add the Aramon and leave the two varietal coferment for 7 days before pressing. Uunfined, unfiltered, no added s02.
