Leaving behind a Parisian finance career, Athénaïs de Béru took over her family’s 400 year old vineyard and produced her first vintage in 2006. Béru is known for producing the coveted classic styles of Burgundy in the most natural way possible. This wine has the structure and finesse of a classic Chablis, but is made sustainably to ensure that generations to come can enjoy this historical style. This wine has flavors of lemon and lime, dried white flowers, and some smoke and saline from the Kimmeridge soil. This opalescent, steely white pairs with goat cheese, seafood, glazed ham and roast chicken.
