ELITE
The estate is situated in Radda in Chianti and has been run by Paolo Cianferoni and his family since 1982 when they bought the vineyard from Paolo's father, Reginadlo Cianferoni who originally founded the estate in 1965. There are roughly 18 hectares in total and many of the vineyards underwent extensive restoration in 1999. Everything is strictly organic on the farm and Carpasa's wines are much sought after as they are handmade and the local soils produce wines that have an unmistakable and pronounced acidity, meaning that they age well. This particular Chianti is a blend of 95% Sangiovese plus a splash of Canaiolo grapes and is aged in Limousin oak barrels for 2 years. It is unfiltered.
A ruby-red in colour. Aromas of red cherries and violets. On the palate complex and pure with tart red-berry notes, integrated tannins and a racy acidity. The finish is warm and spicy. Try with panzanella (Tuscan bread, tomato and pepper salad), pici con ragu (pici pasta in a tomato and meat sauce) or arista al forno (slow roast loin of pork with sage and rocket).
