The Chardonnay Selva della Tesa of Cantina Ca' del Bosco is a white wine produced with 100% Chardonnay grapes, cultivated in the municipalities of Erbusco, Passirano and Provaglio d'Iseo in the province of Brescia. The grapes are harvested during the month of September, after careful selection in the vineyard, and then classified and cooled.There is then an exclusive washing and "massage" of the bunches by using 3 soaking tanks and a drying tunnel. Following the crushing in the absence of oxygen only the best must is placed in oak barrels for fermentation, for about 3 years. Here the wine remains on the lees for 9 months.
