Viticulture: Small parcels in vineyards across the appellation DO Binissalem-Mallorca. Minimum intervention, giving advantage to competitiveness, respectful viticulture.
Winemaking: Manual harvested in crates of 15kg or less. Manual selection of the grapes on the table. Alcoholic fermentation takes place in stainless steel tanks at temperatures lower than 22oC with a variable maceration between 7 and 12 days. Then, it's pressed and left to rest in stainless steel or 500L french oak barrels (old – 1 or 2 wines). No sulphites are added during alcoholic fermentation, although the wine is corrected once the malolactic fermentation is complete. No clarifying agent is used.
