Philippe Secondé is a fifth generation winemaker whose great, great grandfather, Edmond Barnaut, began making wine in 1874. Secondé took over from his father in 1986 after studying viticulture in Burgundy.
While in school, he noticed many of the great winemakers of Burgundy vinified plots separately and has done the same with his 30 plus parcels in Bouzy. The estate practices lutte raisonnée, using organic compounds and keeping chemicals to an absolute minimum.
The grapes are sorted in the winery, pressed and undergo malolactic fermentation in tank. Half of the wine is put into different barrels where it becomes reserve wine for future cuvees. The other half is either used for the vintage bottlings or for a new reserve that will be blended with wine from pre-existing soleras. The non-vintage wines usually spend two years on the lees before disgorgement while the vintage are held back for an additional 12 months.
Largely composed of Pinot Noir, Barnaut’s rose Champagne is made using the saignée method where some of the juice is bled from still red wine. In alignment with Barnaut’s style, this method also helps produce a fuller bodied wine. Ten to 15% Chardonnay is added afterwards. It only spends 18 months on its lees, the minimum requirement by law.
