Our daughter, Daisy, has a ferocious passion for chickens. When she was five, her burgeoning flock escaped and overran the vineyard. This happy accident became a defining moment for our farming, as we embraced the hens' natural inclination to scratch out weeds and balance insect populations.
TASTING NOTES
The 2023 vintage is filled with electric citrus and minerality balanced by honeycomb, melon, and lemon verbena, freshly cut hay and lilacs. Daisy explores uncharted depths with a full yet delicate palate, intricate textural layering, and an infinite mouthwatering finish.
HARVEST NOTES
The fruit was picked at night and then lightly and gently pressed at the winery. Primary fermentation and malolactic conversion occurred spontaneously in 75% stainless steel tank and 25% neutral French oak barrels. The wine rested on the lees for six months to build texture and flavor.
