Lambrusco Emilia Igt Red Dry Sparkling
Refermented in the bottle
The “dark” Lambrusco takes up the traditional Emilian Lambruscos, bottled at home and then kept in the cellar, which refermented in the bottle taking on the foam and thus becoming fizzy. The presence of a light sediment is, now as then, an indicator of authenticity.
Quality control methods have obviously evolved, but refermentation in the bottle gives us a strong and characterful wine, with an “old-fashioned” taste, almost raw, but of great charm. The long stay on the skins gives a beautiful intense ruby red color, hence the name “scuro”.
On the nose it has vegetal hints, wild fruit and light leather, on the palate it is completely dry, crisp and tannic, with great structure. It is ideal for any type of tasty food, baked, grilled or fried. Roasts, cotechino, braised meats, boiled meats with sauces, cutlets, grilled meat but also baked pasta dishes are enhanced with this Lambrusco.
For an “old-fashioned” tasting experience, you can also taste it by shaking the uncorked bottle slightly, so that the sediment is lifted.
